The ingredients needed to make Spicy Chicken Noodles:
  1. Make ready 450 g Noodles
  2. Prepare 400 g Fresh chicken breast
  3. Take 2 Eggs
  4. Take 2 tbsp Cooking oil
  5. Make ready 2 tbsp sesame oil
  6. Prepare 1 pinch turmeric powder
  7. Get 2 tsp Black pepper powder
  8. Prepare 10 flakes of finely chopped garlic
  9. Make ready Half an inch chopped ginger
  10. Take 4 finely chopped green chillies
  11. Get 1 carrot - julienne cuts
  12. Make ready 3-4 spring onions- finely chopped white bulb and greens
  13. Make ready 2 Tbsp soya sauce
  14. Prepare 1 Tbsp red chilli sauce
  15. Take Half a tsp of Red chilli flakes
  16. Make ready 2 tsp Lemon juice
  17. Take As per taste Salt
  18. Prepare as required Water for cooking
Instructions to make Spicy Chicken Noodles:
  1. Take 6 cups of water in a cooking pot and bring it into rolling boil. Add 450g of noodles and cook for 4 minutes. Drain the excess water in a colander and toss it with 2 tsp of cooking oil to avoid sticking and keep it aside.
  2. For preparing shredded chicken, take 1 tbsp of cooking oil in a pan on medium flame. Place the cleaned chicken breast pieces & add 1tsp of black pepper powder, half tsp of salt and a pinch of turmeric powder. Fry for a min and toss it over and fry for another 30 secs. Add 300 ml of water and allow it to boil. Simmer the flame and cook it for another 5 to 7 minutes. Remove the pieces on a plate and retain the chicken broth for cooking.
  3. Take a fork and shred the chicken and set it aside.
  4. Optional: For preparing scrambled eggs, whisk 2 eggs along with 1 tsp of pepper powder and a pinch of salt. Heat a pan, add 1 tbsp of cooking oil and pour the contents to the pan. Scramble it with a spatula and set it aside.
  5. Finally, keep a heavy bottom pan or wok on high flame. Add 2 tbsp of sesame oil and stir fry chopped garlic, ginger, spring onions bulbs (white part), green chilli and carrot one after the other and toss for 2 min. Do not overcook the vegetables. Add the scrambled eggs and shredded chicken and toss it well. Add 2 tbsp of soya sauce, 1 tbsp of red chilli sauce and mix well.
  6. At this stage, add the retained chicken broth and cook for 30 secs. Adjust the flame to medium & add the precooked noodles and toss it well along with half a tsp of red chilli flakes. Squeeze in half a lemon juice and toss it again for 10 secs.
  7. Switch off the flame & garnish with spring onion greens and serve it hot.
