In saucepan, combine rice, coconut milk, water, sugar & salt. Basically the liquids should reach the area RIGHT BEFORE your cuticle (middle of the white semi-circle on your finger nail but not reaching your cuticle). This is also assuming you've got the rice in the pot leveled.

Instructions to make Date and coconut rice - vegan:
  1. Put the rice, coconut milk, most of the water, cardamom and ginger in a pan. Bring to the boil. Simmer until the rice is cooked - about 40-45 mins. Add a little more water if needed.
  2. When the rice is almost cooked, stir in the grated coconut and most of the dates.
  3. Serve with a little more coconut grated on top and the rest of the dates. Enjoy 😋
