The ingredients needed to make Roti John:
  1. Make ready 2 buns / baguettes
  2. Take 2 eggs, well beaten
  3. Make ready pinch salt & pepper to taste
  4. Prepare 2 tbsp oil to shallow fry
  5. Take 1 tbsp chopped coriander leaves
  6. Get 1 tbsp chopped spring onion
  7. Make ready 1-2 tbsp tomato ketchup
  8. Prepare for Stuffing -
  9. Get 1/2 cup chicken mince
  10. Make ready 1 onion, chopped
  11. Take 1 tsp ginger-garlic, chopped

  13. Prepare 1/2 tsp madras curry powder
  14. Prepare 1 tsp sambal paste
  15. Get 1/4 tsp pepper powder (opt)

Instructions to make Roti John:
  1. Stuffing - Heat oil in a pan and add the onion, ginger, garlic and green chilies. Saute till they turn light brown.
  2. Add the mince, sambal paste and all the powdered spices. Stir fry till well cooked. Switch off the flame and mix it with the beaten egg, a pinch each of salt and pepper.
  3. Heat a pan and toast the buns (cut through lengthwise, but still intact). Keep aside. In the same pan heat 1 tsp. oil and pour in half of the egg-mince mix.
  4. Place an open faced bun over the top and press it gently with the spatula.
  5. Tuck in the omelette and when one side is done, gently flip it over & toast the other side too.
  6. Garnish with tomato sauce, spring onions and coriander leaves.
