  2. Make ready drizzle of olive oil

  5. Prepare 40 g pancetta cubed
  6. Make ready 1 tsp chives chopped
  7. Take 1 tbsp mayo double check it is dairy free

  1. Place the pancetta in small pan and fry until golden, about 5 minutes - Set aside
  2. Preheat the oven to 180 oC - Slice the potato into 1/2cm slices and place on a baking sheet - Drizzle with olive oil and season with salt and pepper
  3. Bake for 20 minutes - Remove from the oven and top with the dairy free cheese and pancetta
  4. Bake for another 10 minutes - Serve topped with a little blob of mayo and a sprinkle of chives
