  2. Turn the heat down and gradually stir turkey stock into the flour roux. If it starts to look lumpy, use a balloon whisk to whisk the lumps out. Keep adding the stock until the sauce starts to thin. Add the dried parsley.
  3. Turn the heat up on your hob and whisk continuously until it starts to thicken and bubble. Allow it to cook out on a gentle boil for a few minutes then turn the heat down to a simmer.
  4. Taste the sauce here and season with salt and pepper. Stir in your turkey meat, cooked peas and sweetcorn. Allow to simmer for another 5 mins until piping hot.
  5. Nice served with rice, pasta or boiled potatoes.
