Instructions to make Cheddar Cheese Pie:
In a bowl, mix flour, cold cubed butter and salt until crumbly
Add cold water little by little until dough comes together
Divide dough into 2 portions one bigger than other. cover with cling wrap
Pat dough into rectangular shape and chill for 1 hour
Dust surface with flour and take out bigger dough portion. Keep the second one in freezer until ready to use
Roll dough into a circle bigger than pie pan
Place rolled dough into greased pie pan and trim excess edges
Chill crust for 30 minutes and fork all over
Bake for 10-12 minutes in preheated oven at 180. keep it aside to cool
In a pan, melt butter
Add chopped spring onions and saute for 2-3 minutes
Add vinegar and mix well
Allow mixture to cool
Add mashed potatoes and cream to mixture. mix well
Add red chilli flakes, olives, salt and pepper. mix well
Add cheddar cheese and mix well
Add oregano and parsley. mix well
Place mixture in prebaked crust. spread and level evenly
Take out second portion of dough. Thaw for few minutes. Roll the second portion of dough into a circle as the same size of pie dish
Shape the pie top as desired and Place it on cheese mixture.
Give egg or milk wash to pie top
Bake for 25-30 minutes until golden brown in preheated oven at 180
Allow to cool for 20 minutes
Demould and separate pie bottom, slice and serve warm
