  1. Make ready 2.2 kg (approx) unsmoked gammon piece
  2. Get as needed Water
  3. Get 2 heaped tbsp Coleman's mustard
  4. Make ready 2 heaped tbsp light brown sugar
  5. Get 1 tbsp honey
Instructions to make Honey and Mustard Roasted Gammon:
  1. Soak the gammon up to 24 hours to remove some of the saltiness.
  2. Add fresh water to a large saucepan and place the gammon in the water. Bring the water to boiling point then reduce heat and simmer for around 70-80 minutes. Remove the gammon from the liquid and place it on a baking tray (save the liquid for another meal as it makes great stock, it can be frozen once cooled).
  3. Preheat oven to 180c.
  4. In a small bowl mix together the sugar, honey and Mustard.
  5. Coat the gammon in the glaze and transfer to the oven. Cook for approximately 20 minutes then turn, glaze and bake for another 20 minutes.
  6. Lest it rest for 10 minutes then serve as you wish. I served mine with the classic egg and chips.
