  9. Cook over medium heat for 10 minutes, until browning underneath and set in the middle
  10. Put under the grill/broiler for a further 5 minutes
  11. Gently loosen the edges with a spatula (avoid using metal on a non stick pan) and turn over onto a plate, give the bottom of the pan a good tap if it doesn't come out straight away
  12. Allow to set for a minute or two before cutting into quarters to serve.
