  1. Prepare For making masala paste
  2. Make ready 1 big Onion
  3. Make ready 3 cloves garlic crushed
  4. Make ready 1 thsp ginger crushed
  5. Prepare 2 green chillies
  6. Get 1 tbsp coriander powder
  7. Prepare 3/4 tbsp chilli powder
  8. Make ready 1/4 tbsp turmeric powder
  9. Take 1 tbsp meat masala
  10. Make ready 1 tsp garam masala
  11. Make ready 1/4 tsp fennel powder
  12. Make ready as per taste Salt
  13. Take 2 tsp Vinegar
  14. Make ready 4 tbsp coconut oil
  15. Take For making roast
  16. Get 3/4 kgs Beef (cubes)
  17. Take 20-25 chopped shallots
  18. Make ready 3 cloves garlic chopped
  19. Make ready 1 small piece of ginger chopped
  20. Get as required Curry leaves handful / plenty
  21. Prepare 2 tbsp Coconut pieces/ thenga kothu
  22. Take 1 tbsp pepper powder or according to one's spice level

To achieve an authentic taste and flavour, only natural masalas are used in Kuttanadan Beef Roast. Thinly sliced red meat is cooked with pepper and essential ingredients in a pressure cooker. This recipe for Indian beef roast is my simpler take on a very popular Keralite dish called erachi ularthiyathu, also known as Kerala beef fry. Beef is a popular protein among Christians in India, especially in Kerala, a south Indian state located off the Malabar coast.

Steps to make Kuttanadan Beef Roast / Kerala Beef Roast:
  1. Heat oil in a pan and add chopped onions,crushed ginger,garlic,curry leaves,green chilled,salt.
  2. Saute untill the onions turn light golden brown.
  3. Add all the powders one by one and vinegar and saute in low flame untill you dont smell the raw flavours of the powders.
  4. Let it cool and grind this into a fine paste.
  5. In a pressure cooker, pour in this prepared masala paste along with beef pieces. And pressure cook according to the doneness of choice.
  6. Now to making Roast: in a large skillet heat 2tbsp of coconut oil and add shallots,chopped ginger garlic,curry leaves,slit green chillies and saute untill it turns slight golden brown
  7. Add beef masala to this and roast until it turns nearly dark brown to black color. Add plenty of curry leaves and pepper while roasting.
  8. Serve it hot with malabar parotta.
