preheat oven to 240°F.
CAKE BASE : mix all the ingredients except flour. beat well and now add the flour and fold in the flour with a spoon. pour the batter in a oiled cake mould and bake in a preheated oven for fifteen minutes or till the toothpick comes out clean.
MANGO LAYER : in a sauce pan boil the blended mango till 1/3 of the mango paste volume is reduced.
now add milk and egg and stir with a hand beater till thick custard like consistency is achieved. take it off the stove and add all the ingredients for mango layer. mix thoroughly and add the gelatin powder. now let it cool to room temp.
pour the mango custard over the cake base after the cake has cooled down.
put the cake in fridge till the gelatin sets.
COFFEE FROSTING : beat the egg whites with an electric hand beater till white peaks form. add the icing sugar. beat till mixed. now add the butter and the rest of ingredients. beat till foamy peaks form. put this mixture in a steel bowl and over icy cold water while beating.
cut 1 mango in small cubes . spread the cubes over the cake.
put the frosting in a pipping bag and decorate the cake as you'd like to.
