Instructions to make Kadai mix vegetable:
  1. Cut and chop all the vegetables and wash them properly.
  2. Meanwhile, heat oil in a kadai, add 2 chopped onions, 2 green chillies, and ginger and garlic. Saute them for a minute or two.
  3. Now add chopped tomatoes alongwith all the masalas except salt. Saute till the mixture get mushy and oil seprates.
  4. Now add all the vegetables, salt. Stir them on high flame for around 10 minutes..stirring in between so that they don't burn.
  5. After 7-8 minutes the veggies will be done..add garam masala and chopped coriander to garnish.
  6. It can be cooked on low flame too which will take 5-10 minutes more but cooking on high flame retain the nutritional value of the veggies..
  7. Enjoy them with chapatis or parathas.
