Preheat oven to 200°C / 400°F and line a large baking sheet with foil. - Rinse and scrub potatoes and cut in half length wise. This will speed cooking time. Otherwise leave whole and bake longer.
Rub the sweet potatoes with a bit of olive oil and place face down on the same baking sheet (or another baking sheet depending on size). - While the sweet potatoes are roasting, prepare your veggies.
Take a nonstick pan add 2 Tbsp oil add garlic minced fry few second then add onion sauté until the onions are tender.Add salt, chilli flakes, black pepper, according to your taste add cumin, coriander and cinnamon powder stir well. - Add bell peppers and tomatoes, chickpea and kidney beans stir well 4-5 minutes then turn the heat off and add lemon juice, dill mix well then all veggies set a side. - - Once sweet potatoes are fork tender remove from oven.
🌻For serving: - flip potatoes flesh-side up and smash down the insides a little bit. Then top with chickpeas, herb sauce, parsley and chili garlic sauce (optional). Serve immediately.
